BLOG - How to make sure you’re Christmas turkey is cooked perfectly – by Selby Butchers

If you have ever hosted on Christmas Day, you’ll know how crucial it is to get the timings right on the cooker.

And it’s not easy when you are trying to balance roasting several different meats – including the all-important turkey centrepiece - all with their own unique optimum cooking timeframes.   

Thankfully, help is at hand, and the skilled butchers at Selby Butchers, which has been a popular fixture in the town at Market Cross for decades, know a thing or two about cooking meat for a big occasion. 

In the blog post below, manager Danny Finney, aged 35, and assistant manager Adam Holmes, also aged 35, share a recommended recipe from the BBC Good Food Guide on how to cook the perfect Turkey Crown on Christmas Day. They also have some valuable advice about what to do with the leftovers.

Simple steps to cooking the perfect Turkey Crown:- 

*Remove the turkey breast from the fridge and allow it to stand for an hour at room temperature.

*Heat your oven to 190C/170C or fan/gas mark 5 and put a rack inside the oven tray with the onions and carrots underneath.

*Weight the turkey breast and calculate to 40 minutes per kilo, plus an additional 20 minutes.

*Rub butter over the skin and season before putting the turkey breast onto the rack.

*Pour in water to cover the veg and cover the whole tin with a tent of foil.

*Roast for the allotted time and be sure to take the foil off 20 minutes before the end to brown the skin. You could test the meat with the point of a knife and see if the knife feels hot when you pull it out and the juices run clear. Use a thermometer, if you have one, and check that it reads 65/70C. if it appears to be underdone, put back in the oven and cook for a further 10 minutes.       

Leftovers

We all inevitably have some leftovers and the best thing to do with all of that spare meat is to make curries, sandwiches or pies that can keep you going over the festive period.
